Tortillas for Breakfast
And why not have tortillas for breakfast? These are made in a style like
enchiladas. Extra lean ground beef adds a flavor boost while allowing the
calories to stay low. Lots of veggies and eggs provide the bulk and the
nutrition.
2 teaspoons olive oil
1 cup (160 g) onion, chopped
3/4 pound (340 g) extra lean ground beef
1 cup (150 g) green bell pepper, chopped
1/4 teaspoon black pepper
1 1/2 cups (355 ml) egg substitute
6 whole wheat tortillas, 8-inch (20 cm)
1/2 cup (115 g) fat-free sour cream
1/2 cup (130 g) salsa
Heat oil in large fry pan. Add chopped onion, beef, green
bell pepper, and black pepper. Stir-fry until tender. Pour egg substitute over
onion mix and cook until half-cooked. Spoon into tortilla shells and roll. Bake
at 350°F (180°C, or gas mark 4) for 25 minutes. Top with sour cream and salsa
and bake 5 to 10 minutes longer
