Serve this easy and delicious oven chicken dish with a favorite pasta.
Ingredients
4 boneless chicken breast
halves
1 (6 oz.) can tomato paste
3/4 cup water
2 cloves garlic (minced)
1 tablespoon dried parsley
flakes
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried oregano
1/2 teaspoon Italian
seasoning
1/4 teaspoon crushed red pepper
(optional)
2 cups shredded mozzarella
cheese
1/4 cup grated parmesan
cheese
Directions
Preheat oven to 400 degrees
F.
Place chicken in greased baking dish. In
a bowl, mix together tomato paste, water, garlic, parsley, salt and pepper,
oregano, Italian seasoning and red pepper. Pour into a saucepan, bring to boil,
and then pour over chicken. Bake, uncovered at 400 degrees F. for 15 to 20
minutes or until chicken is no longer pink in the center. Add the mozzarella and
parmesan cheese on top of the chicken and bake 10 minutes more. Yield: 4
servings.
