Serve this quick and easy chicken dish with white rice and egg rolls.
Ingredients
6 skinless, boneless chicken breast
halves (cut in 3-inch pieces)
1/2 cup egg or egg substitute, slightly
beaten
3/4 cup cornstarch
Sauce:
2/3 cup sugar
1/2 cup vinegar
4 tablespoons ketchup
2 tablespoons soy sauce
1/2 teaspoon minced garlic
Directions
Preheat oven to 325 degrees
F.
Mix all sauce ingredients together; set
aside. Dip chicken pieces into the egg and then roll in cornstarch. Cook chicken
in a skillet, sprayed with cooking spray until brown on each side. Add chicken
to a shallow baking pan, pour sauce over chicken and bake uncovered for 45 to 55
minutes at 325 degrees. Yield: 6 servings.
