Penne Chicken
To lower the calories, chicken broth can
be substituted for the heavy cream in this recipe.
Ingredients
4 skinless, boneless breast halves, cut
into 1” pieces
6 ounces penne pasta
1 bell pepper, chopped
1 cup fresh mushrooms
2 tomatoes, chopped
3 cups heavy cream
1 garlic clove
1 1/2 cups Parmesan cheese
2 tablespoons olive oil
Directions
Cook the pasta in boiling salted water
until al dente and drain. Heat olive oil in a skillet. Sauté the chicken with
peppers in the skillet until chicken is lightly browned. Add mushrooms and
tomatoes; continue to sauté until vegetables are tender. Add heavy cream, garlic
and Parmesan cheese and cook for a few minutes until hot. Mix with pasta to
serve. Yield: 4 servings.
